 Homemade Japanese Sushi

Nigiri and Maki Sushi Recipe 
Sushi is a traditional Japanese dish that consists of vinegared rice combined with the various  ingredients , including seafood, vegetables and some topical fruits.  There is two popular recipes of Sushi , Sushi Rice and Nigiri Sushi .

 Ingredients for Sushi Rice: 

    . 1 teaspoon salt 
     . 2 tablespoons of sugar 
     .  1/4 cup rice vinegar 
     .  11/4 cup water
     .  1 cup sushi rice ( short_ grain Japanese rice) 

Ingredients for Nigiri Sushi:

    .  Fresh sushi grade_ fish ( e. g tuna, salmon , crab or fish )
    Soy source for dipping 
    . Wasabi optional 

Ingrediants for making Sushi (Sushi roll):

     . Sushi Rice 
     .  Nori (seaweeds) sheets
     .  Filling (e. g cucumber , avocado , cooked shrimp, crab, or fish )
       Soy source , pickled ginger , and wasabi for serving. 

Instructions :

      Prepare the Sushi Rice ;

           .   Rinse the sushi rice thoroughly in cold water until the water                    runs clear. Drain well.
           . In a medium saucepan combine the rice and 11/4 cup of water.                  Bring to a boil, the reduce the heat to low, cover and simmer for                  15 minutes or until the rice is tender.
          . while the rice cooks, mix the rice vinegar, sugar, and salt in a                    bowl until the sugar and salt dissolve.
          . Transfer the cooked rice in to a wooden or non _ metallic bowl.                    while it's still hot, gently fold in the vinegar mixture using a                            wooden spatula. Be careful not to mash the rice. Allow it to cool                   the room temperature.

  Prepare Nigiri Sushi:

             Wet your hands with a little water to prevent the rice from the                     sticking. Take a small amount of sushi rice and shape it in to                       and oval or rectangular mound. 
           .If using fish, slice it thinly against the grain. Place a slice of a 
             fish on top of the rice mound.
      . Optionally add a tiny dab of wasabi between the rice and fish 
           . Serve the Nigiri sushi with soy source for dipping

       Prepare Maki Sushi (Sushi roll);

     . Lay a lamboo Sushi rolling mat (covered with plastic wrap) on clean surface. place a sheet of nori shiny side down, on the mat.
      . Wet your hands to prevent sticking and grab a handful of sushi rice spread the rice evenly over the rice , leaving about one inch of nori at the top edge uncovered.
     . Add your choice of fillings ( e. g cucumber ,avocado, cooked shrimp, crab or fish) in a line along the center of the rice. 
     . Carefully lift the bamboo mat's edge closet to you and roll it over the filling . Apply gentle pressure to shape the roll.
       . Wet the exposed nori edge with a little water to seal the roll.
        
. Using a sharp knife moistened with water , slice the sushi roll into bite_ sized pieces..
        
    .  Serve the Maki Sushi with soya source, picked ginger and the wasabi.
 
Remember the sushi making requires practice to perfect the art of rolling and shaping . It's also important to use fish, high quality ingrediants, especially when dealing with row fish.
